Preparing the Shrimp

    Prepare the Poaching Liquid

    In a large pot, combine 4 cups of water, the sliced lemon, Old Bay seasoning, and salt. Bring the mixture to a boil over medium-high heat.

    Poach the Shrimp

    Once the water is boiling, add the shrimp to the pot. Cook for 2-3 minutes, or until the shrimp are pink and opaque. Do not overcook.

    Chill the Shrimp

    Remove the shrimp from the pot using a slotted spoon and transfer them to a bowl filled with ice water to stop the cooking process. Let them cool for about 5 minutes.

    Drain and Refrigerate

    Once cooled, drain the shrimp and place them on a plate. Cover and refrigerate until ready to serve.

Making the Cocktail Sauce

    Combine the Ingredients

    In a medium bowl, mix together 1 cup of ketchup, 2 tablespoons of prepared horseradish, 1 tablespoon of lemon juice, 1 teaspoon of Worcestershire sauce, and 1 teaspoon of hot sauce.

    Taste the cocktail sauce and season with salt to taste. Adjust the amount of horseradish or hot sauce if you prefer a spicier sauce.
