Method

Preparing the Steak

  1. 1

    Season the Steak

Take the rib eye steaks and pat them dry with paper towels. Season both sides generously with salt and black pepper.

  2. 2

    Rest the Steak

Let the seasoned steaks sit at room temperature for about 30 minutes to ensure even cooking.

Cooking the Steak

  1. 3

    Heat the Pan

In a large cast-iron skillet or grill pan, heat the olive oil over medium-high heat until shimmering.

  2. 4

    Cook the Steak

Place the rib eye steaks in the hot pan. Cook for about 4-5 minutes on one side, without moving them, until a nice crust forms.

  3. 5

    Add Aromatics

Flip the steaks and add the garlic cloves and rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, adjusting time for your desired doneness.

  4. 6

    Baste the Steak

Tilt the pan slightly and use a spoon to baste the steaks with the pan juices and aromatics for enhanced flavor.

Resting and Serving

  1. 7

    Rest the Steak

Remove the steaks from the pan and place them on a cutting board. Tent with foil and let them rest for 5-10 minutes.

  2. 8

    Serve

Slice against the grain and serve the rib eye steaks with optional sides like roasted asparagus and potatoes.
