Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring 4 liters of water to a rolling boil. Add 1 teaspoon of salt.

  2. 2

    Cook the Pasta

Add 200 grams of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain the Pasta

Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.

Preparing the Sauce

  1. 4

    Heat the Oil

In the same pot, add 2 tablespoons of olive oil over medium heat.

  2. 5

    Sauté Garlic

Add 3 minced garlic cloves to the pot and sauté for about 1 minute until fragrant, being careful not to burn them.

  3. 6

    Add Tomatoes

Stir in 250 grams of halved cherry tomatoes and cook for 5-7 minutes until they start to soften.

  4. 7

    Season the Sauce

Add 1 teaspoon each of black pepper and red pepper flakes, and mix well.

Combining Ingredients

  1. 8

    Combine Pasta and Sauce

Add the drained pasta to the pot with the sauce. Toss everything together, adding reserved pasta water as needed to achieve desired consistency.

  2. 9

    Add Basil and Cheese

Remove from heat and stir in 1 cup of chopped fresh basil and 50 grams of grated Parmesan cheese.

  3. 10

    Adjust Seasoning

Taste the dish and adjust seasoning with salt and pepper if necessary.

Serving

  1. 11

    Plate and Serve

Serve the Macallas warm, garnished with extra basil and Parmesan cheese if desired.
