Marinade Preparation

    Prepare the Marinade

    In a medium bowl, combine olive oil, soy sauce, minced garlic, Dijon mustard, black pepper, salt, and rosemary. Whisk together until well mixed.

    Marinate the Steak

    Place the ribeye steaks in a large resealable plastic bag or shallow dish. Pour the marinade over the steaks, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best flavor.

Cooking the Steak

    Preheat the Grill

    Preheat your grill to high heat (around 450°F to 500°F).

    Cook the Steak

    Remove the steaks from the marinade and let them come to room temperature for about 30 minutes. Season with additional salt and pepper if desired. Grill the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. In the last minute of grilling, add butter on top of each steak to melt.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Preparing the Sides

    Prepare the Potatoes

    While the steaks marinate, preheat your oven to 400°F (200°C). Cut the potatoes into wedges and place them in a bowl. Toss with olive oil, garlic powder, and salt until evenly coated. Spread them out on a baking sheet in a single layer.

    Bake the Potatoes

    Bake the potatoes in the preheated oven for 30-35 minutes, or until golden and crispy, flipping halfway through.

    Prepare the Asparagus

    Trim the tough ends off the asparagus and toss with olive oil, salt, and pepper. Grill or roast alongside the potatoes for the last 10 minutes of cooking.
