Method

Preparation of Salmon

  1. 1

    Marinating the Salmon

In a bowl, combine olive oil, lemon juice, salt, and black pepper. Mix well.

  2. 2

    Coating the Salmon

Place the salmon fillets in the bowl and coat them evenly with the marinade. Let them sit for at least 15 minutes.

Grilling the Salmon

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat, approximately 375-400°F (190-200°C).

  2. 4

    Grilling the Salmon

Place the marinated salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side or until the salmon flakes easily with a fork.

Preparation of Vegetables

  1. 5

    Preparing the Vegetables

Wash and trim the asparagus. Slice the zucchini and bell pepper into thin strips. Halve the cherry tomatoes and finely chop the garlic.

  2. 6

    Sautéing the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant. Then, add the asparagus, zucchini, bell pepper, and cherry tomatoes. Cook, stirring occasionally, for about 5-7 minutes or until the vegetables are tender but still crisp.

Serving

  1. 7

    Plating the Dish

Serve the grilled salmon on a plate accompanied by the sautéed seasonal vegetables. Optionally, drizzle with extra lemon juice before serving.
