Method

Preparing the Filet Mignon

  1. 1

    Season the Steaks

Pat the filet mignon steaks dry with paper towels. Season generously with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it’s shimmering, about 2-3 minutes.

  3. 3

    Sear the Steaks

Place the seasoned steaks in the hot skillet. Sear for about 4-5 minutes on one side without moving them, until a golden-brown crust forms.

  4. 4

    Flip and Add Flavor

Flip the steaks and add unsalted butter, rosemary, and crushed garlic cloves to the pan. Cook for an additional 4-5 minutes, basting the steaks with melted butter.

  5. 5

    Check for Doneness

For medium-rare, the internal temperature should be about 130°F (54°C). Adjust cooking time for desired doneness.

  6. 6

    Rest the Steaks

Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Optional Side Dishes

  1. 7

    Prepare Asparagus

While the steaks are resting, bring a pot of salted water to a boil. Add asparagus and cook for 3-4 minutes until tender but still crisp. Drain and set aside.

  2. 8

    Make Mashed Potatoes

Peel and chop the potatoes into chunks. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

  3. 9

    Mash the Potatoes

Add heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
