Preparation of Chocolate Mousse

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir until melted and smooth. Remove from heat and let it cool slightly.

Prepare the Egg Yolks
In a separate bowl, whisk the egg yolks with half of the granulated sugar (25g) until the mixture is pale and thick. Stir in the melted chocolate and vanilla extract until fully combined.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip it, as you want a light and airy texture.

Whip the Egg Whites
In a clean bowl, add the egg whites and a pinch of salt. Using an electric mixer, whip the egg whites until soft peaks form. Gradually add the remaining 25g of sugar and continue whipping until stiff peaks form.

Combine the Mixtures
Gently fold the whipped cream into the chocolate mixture until just combined. Then, fold in the whipped egg whites in three additions, being careful not to deflate the mixture.

Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.
