Directions
- 1
Prepare the Ramekins
Preheat your oven to 425°F (220°C). Grease four ramekins with 1 tablespoon of butter, ensuring that the bottoms and sides are well coated. This will help the cakes release easily after baking.
- 2
Melt Chocolate and Butter
In a medium microwave-safe bowl, combine 4 oz of dark chocolate and 1 stick of unsalted butter. Microwave in 30-second intervals, stirring in between, until the chocolate and butter are completely melted and smooth.
- 3
Mix Sugar and Eggs
In a separate mixing bowl, whisk together 1 cup of granulated sugar, 2 large eggs, 2 large egg yolks, and 1 tsp of vanilla extract until the mixture is light and fluffy.
- 4
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from cooking. Mix until well combined.
- 5
Add Dry Ingredients
Sift in 1 tablespoon of all-purpose flour and add a pinch of salt. Gently fold the dry ingredients into the chocolate mixture until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the filled ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.
