Method
Prepare Fruit & Aromatics
Slice and light-muddle
Place the sliced strawberries, raspberries and orange slices in a large wine glass or small pitcher. Gently muddle the fruit about 4–6 times with the back of a spoon or muddler — enough to release some juices but not to purée. Add the mint leaves and press lightly once or twice to release aroma without shredding the leaves.
Assemble the Wine
Pour 1.5 cups of chilled dry rosé into the glass or pitcher over the muddled fruit and mint. Stir gently to blend flavors. Taste and add the simple syrup (1 tablespoon) only if you want a touch of sweetness; stir to combine.
Add 0.5 cups sparkling water to the mixture to give the drink a light effervescence. Stir gently once to incorporate. Adjust sparkling water to taste if you prefer more or less fizz.
Finish & Serve
Fill serving glasses with ice (about 1 cup divided between glasses). Strain the rosé mixture into the prepared glasses, allowing a few pieces of fruit to come through if desired, or strain for a cleaner pour.
