Filet Mignon
VT Loaded Mashed Red Potatoes
Make the Mashed Potatoes
Boil red potatoes in salted water until tender. Drain and return to pot. Mash with butter and heavy cream until smooth. Stir in cheddar cheese, chopped scallions, and crumbled bacon.
Asparagus
Roast the Asparagus
Preheat the oven to 400°F (200°C). Toss asparagus with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.
Sauteed Baby Spinach
Sauté the Spinach
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add baby spinach and cook until wilted, about 3-4 minutes.
