Prepare the Ingredients

Wash and chop the green tomatoes, tomatillos, cucumber, carrots, and red onion into smaller pieces for easier blending.

Blend the Vegetables

In a blender, combine the chopped green tomatoes, tomatillos, cucumber, carrots, red onion, and cilantro. Blend until smooth.

Add Avocado

Add the peeled and pitted avocados to the blender. Blend again until the mixture is creamy and well combined.

Season the Gazpacho

Add lime juice, olive oil, salt, and black pepper to the blended mixture. Blend once more to incorporate the seasonings.

Chill the Gazpacho

Transfer the gazpacho to a bowl or container, cover, and refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill.

Serve

After chilling, taste the gazpacho and adjust seasoning if necessary. Serve cold, garnished with additional cilantro or diced vegetables if desired.
