Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water to chill while you build the cocktail.

  2. 2

    Combine ingredients

In a mixing glass or cocktail shaker, add 2 oz gin, 0.5 oz dry vermouth, 0.25 oz Becherovka (or herbal liqueur), 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters.

  3. 3

    Add ice and stir

Fill the mixing glass with 1 cup of ice. Stir gently and consistently for about 20–30 seconds (15–20 full rotations) until well chilled and slightly diluted. If using a shaker, shake hard for 10–12 seconds then strain into a chilled glass — stirring is preferred for clarity.

  4. 4

    Strain

Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine mesh strainer (or a Julep strainer plus fine sieve) to remove small ice shards and botanical bits.

Garnish & Finish

  1. 5

Express the oils from one lemon twist over the drink by holding the twist about 3–4 inches above the surface and giving it a quick squeeze so the oils spray onto the cocktail. Run the twist around the rim and drop it into the drink.

  2. 6

Optionally, gently slap the rosemary sprig between your palms to release aromatics and place it on the rim or laid across the coupe as a fragrant garnish. Serve immediately.
