    Brown the Butter

    In a medium saucepan, melt 1 cup (2 sticks) unsalted butter over medium heat. Continue cooking, swirling the pan occasionally, until butter foams, then the milk solids turn golden brown and smell nutty — about 6–8 minutes. Remove from heat and pour into a heatproof bowl to stop cooking. Let cool to warm (about 20–25 minutes).

    Dry Ingredients

    While the butter cools, whisk together 2 1/2 cups all-purpose flour, 1 tsp baking soda, 1 tsp fine sea salt, and 1 tbs cornstarch in a bowl. Set aside.

    Cream Sugars and Butter

    In a large mixing bowl, combine 1 cup packed light brown sugar and 1/2 cup granulated sugar. Add the cooled brown butter and beat (by hand or with a mixer) until fully incorporated and slightly fluffy, about 1–2 minutes. The mixture may be more like a paste because the butter is melted; that's fine.

    Add Eggs and Vanilla

    Add 2 large eggs, one at a time, mixing until each is incorporated. Stir in 2 tsp pure vanilla extract. Scrape down the bowl as needed.

    Combine Wet and Dry

    Add the flour mixture to the butter-sugar-egg mixture in two additions, mixing on low just until no streaks of flour remain. Do not overmix.

    Add Chocolate

    Fold in 2 cups semisweet chocolate chips (or chopped chocolate) until evenly distributed.

    Chill Dough

    Cover the bowl tightly and refrigerate the dough for at least 1 hour (up to 24 hours). Chilling firms the dough and develops flavor; for best texture, chill 1–4 hours.

    Portion and Bake

    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Using a 2-tablespoon scoop (or rounded tablespoon), portion dough balls about 1.5 inches in diameter and place 2 inches apart on the sheet. Bake one sheet at a time on the middle rack for 10–12 minutes, until edges are golden brown and centers look slightly underbaked. Rotate sheet halfway through baking for even color.

    Finish and Cool

    Remove cookies from oven and immediately sprinkle each with a small pinch of coarse sea salt (~a generous pinch divided among cookies, about 0.25 tsp total). Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Cereal Milk

    Toast the Cereal: Preheat oven to 325°F (160°C). Spread 1 cup cornflakes on a small baking sheet and toast for 6–8 minutes until slightly more golden and crunchy. Alternatively, toast briefly in a dry skillet over medium heat for 2–3 minutes, stirring. Let cool slightly.

    Steep the Milk: Place the toasted cornflakes in a jar or bowl and pour 2 cups whole milk over them. Add 1 tsp granulated sugar, 1/2 tsp vanilla extract, and a pinch of salt. Cover and refrigerate for at least 30 minutes — preferably 1 hour — to allow the milk to take on cereal flavor and sweetness.

    Strain and Chill: After steeping, strain the milk through a fine-mesh sieve or cheesecloth into a clean container, pressing lightly on the cereal to extract flavor but not grit. Discard the soggy cereal (or reserve for another use). Chill the cereal milk until cold.

    Serve: Pour chilled cereal milk into glasses alongside warm or room-temperature brown butter chocolate chip cookies.

Serving / Finishing

    Presentation: Place 2–3 cookies on a plate and serve with 6–8 oz (about 3/4 to 1 cup) of cereal milk per person. Optionally, drizzle a little extra cereal milk over a cookie for the 'milk & cookies' experience or serve the cereal milk in a small pitcher for dipping.
