    Prep and boil potatoes

    Place the peeled, cut potatoes in a large pot and cover with cold water (about 10–12 cups). Add 1 tablespoon kosher salt. Bring to a rapid simmer over high heat, lower to medium-high to maintain a steady simmer, and cook until potatoes are very tender when pierced with a fork, 15–20 minutes depending on size.

    Drain and steam-dry

    Drain potatoes thoroughly in a colander. Return them to the hot pot off the heat and let sit for 1–2 minutes to evaporate excess moisture (this helps produce fluffy mashed potatoes).

    Mash and enrich

    Meanwhile, warm the milk in a small saucepan or microwave until hot but not boiling. In a mixing bowl or in the pot with the potatoes, add the 6 tablespoons unsalted butter and 4 oz softened cream cheese to the potatoes. Using a potato masher or ricer, mash until mostly smooth. Gradually stir in warmed milk 1/4 cup at a time until you reach a creamy consistency. Fold in 1 teaspoon salt and 1 teaspoon freshly ground black pepper, tasting and adjusting seasoning as needed. If you prefer extra-smooth potatoes, use a hand mixer on low just until combined—do not over-beat.

    Cook bacon

    While potatoes are boiling, cook 6 slices of bacon until crispy: either in a skillet over medium heat (turning occasionally) for 8–10 minutes, or on a rimmed baking sheet in a 400°F (200°C) oven for 12–18 minutes. Transfer bacon to a paper-towel-lined plate and when cool, chop into small pieces.

    Prepare scallions and cheese

    Thinly slice the scallions, separating white and green parts if desired. Shred 1 1/2 cups sharp cheddar if not pre-shredded and measure out 1 cup sour cream and 2 tablespoons chopped chives.

    Assemble loaded mashed potatoes

    Transfer the mashed potatoes to a serving bowl or keep in the pot on low heat. Make a shallow well in the center and add 1 tablespoon melted butter. Sprinkle half (about 3/4 cup) of the shredded cheddar over the top so it begins to melt. Scatter the chopped crispy bacon evenly, then dollop sour cream (use full 1 cup or spoon desired amount). Sprinkle the sliced scallions and chopped chives over the potatoes. Finish with the remaining cheddar and additional cracked black pepper and salt to taste.

    Optional broil for bubbly topping

    If you want a browned, bubbly cheese topping, transfer the assembled mashed potatoes to an oven-safe dish, sprinkle remaining cheddar evenly, and place under a preheated broiler on high for 1–3 minutes, watching closely until cheese is melted and lightly browned. Remove and garnish with extra scallions and chives.
