Chill glass: place a rocks glass or coupe in the freezer for a few minutes or fill it with ice water while you prepare the cocktail.

Prepare shaker: add 6 ice cubes to a cocktail shaker.

Measure and pour: pour 2 oz Jameson Irish Whiskey into the shaker, then add 0.5 oz fresh lime juice and 0.5 oz simple syrup.

Add bitters: add 2 dashes of Angostura bitters into the shaker.

Shake: secure the shaker lid and shake vigorously for about 10–15 seconds until the shaker is cold to the touch (this chills and dilutes the drink properly).

Prepare glass: remove the chilled glass from the freezer or dump the ice water. If serving over fresh ice, add 2–3 fresh ice cubes to the rocks glass.

Strain and serve: double-strain (using a Hawthorne and fine mesh strainer if available) the cocktail into the chilled glass (over fresh ice if using a rocks glass, or neat into a coupe).

Garnish and finish: express the oils of a lime peel over the drink or place a lime wheel on the rim. Serve immediately.
