Method

Wine Bottle & Serving

  1. 1

    Inspect & Chill

Check the bottle for any visible sediment or damage. Hacienda El Ternero Torno Crianza is typically a Tempranillo-based crianza with moderate tannins; chill lightly to around 16–18°C (60–64°F) if stored at room temperature. To achieve this, place the bottle in the refrigerator for 20–30 minutes or in an ice bucket for 10–15 minutes.

  2. 2

    Open the bottle

Use a waiter’s corkscrew to remove the foil and cork cleanly. Wipe the lip of the bottle with a clean cloth or paper towel to remove any cork bits or dust.

  3. 3

    Decant (optional)

If the bottle is older or you want to open up aromas and soften tannins, decant the wine 30–60 minutes before serving. Slowly pour the wine into a decanter, allowing a little air contact. For younger Crianza, 15–30 minutes in a decanter is sufficient.

  4. 4

    Pour

Pour into appropriate red wine glasses, filling each to about one-third full (approximately 120–150 ml per serving) to allow room for swirling and aroma concentration.

  5. 5

    Serve temperature & tasting notes

Serve at 16–18°C (60–64°F). Note tasting characteristics: likely red and black fruit (cherry, plum), moderate oak spice, leather or earthy undertones, balanced acidity and moderate tannins. Encourage guests to swirl and smell before sipping to appreciate the bouquet.

  6. 6

    Palate cleansing

Provide a carafe of filtered water and water glasses to cleanse the palate between tastings and when switching to other wines or foods.

Optional Pairings & Accompaniments

  1. 7

    Prepare cheese & charcuterie

Arrange the Manchego and sliced chorizo/salami on a serving board. Fan the cheese slices and fold or roll the charcuterie for easy picking. Keep portions bite-sized so they are easily sampled between sips.

  2. 8

    Toast almonds & slice bread

If almonds are not already toasted, heat a dry skillet over medium heat and toast the Marcona almonds for 3–4 minutes, shaking frequently until fragrant and lightly browned. Slice the rustic bread or baguette into 1–1.5 cm thick slices. Optionally, lightly toast the bread for 3–4 minutes in a 180°C (350°F) oven until just crisp.

  3. 9

    Arrange olives & chocolate

Place mixed olives in a small bowl and dark chocolate in small pieces on the board. These offer contrasting flavors that pair well with the wine's fruit and tannin structure.

  4. 10

    Serve and enjoy

Bring the wine, glasses, and prepared board to the table. Suggest pairing bites: cheese with a sip to highlight creaminess, charcuterie to complement savory and spice notes, and dark chocolate for a finishing contrast. Encourage guests to taste the wine between different pairings to notice how flavors shift.
