Bean & Corn Patty

    Prepare beans

    Place the drained and rinsed black beans in a large bowl. Use a fork or potato masher to roughly mash the beans, leaving some whole for texture (aim for mostly mashed with some whole beans remaining).

    Mix patty ingredients

    To the mashed beans, add the corn kernels, finely chopped red onion, chopped cilantro, minced garlic, ground cumin, smoked paprika, hot sauce (if using), lime juice, salt and black pepper. Mix until evenly combined.

    Bind and shape

    Add the flour a little at a time and mix until the mixture holds together when pressed. You should be able to form four patties. If too wet, add up to 1–2 tablespoons more flour; if too dry, add a splash of water or a teaspoon of oil. Form 2 patties (to match 2 buns) about 3/4-inch thick and 3.5–4 inches in diameter.

    Cook patties

    Heat a large skillet over medium heat and add the olive oil. Once shimmering, add patties (work in batches if necessary). Cook 4–5 minutes per side until golden brown and heated through. Press gently once halfway through cooking to help form a crust. If using cheese, place a slice of cheddar on each patty during the last minute of cooking and cover the pan to melt.

House Black Aioli

    In a small bowl, whisk together mayonnaise, black garlic paste (or mashed roasted garlic), lemon juice, Dijon mustard, smoked paprika, salt and black pepper until smooth. Taste and adjust seasoning. Refrigerate until assembly. Makes about 6–8 tablespoons.

Assembly & Toppings

    Toast buns

    Butter the cut sides of the burger buns. Heat a clean skillet over medium heat and toast the buns, buttered side down, until golden brown, about 1–2 minutes.

    Assemble burger

    Spread about 1 tablespoon of house black aioli on the bottom bun. Place a lettuce leaf on the aioli, then the warm bean & corn patty (with melted cheddar if used). Top the patty with 1 tablespoon of bbq sauce, tomato slices, pickle slices and red onion rings. Spread 1 tablespoon of aioli on the top bun and place on the burger.

    Serve

    Serve immediately while patties are warm. Offer extra aioli and bbq sauce on the side. Leftover patties can be refrigerated for up to 2 days and reheated in a skillet.
