Braised Lamb Shanks

Prep and Season
Preheat oven to 325°F (165°C). Pat lamb shanks dry with paper towel. Combine 1 tsp kosher salt and 1 tsp black pepper with the flour on a plate and dredge each shank lightly, shaking off excess.

Brown Shanks
Heat a large heavy oven‑proof Dutch oven over medium-high heat. Add olive oil and 1 tablespoon butter. When shimmering, add shanks (work in batches to avoid crowding) and brown on all sides, about 6–8 minutes per shank. Transfer browned shanks to a plate.

Deglaze and Build Braising Liquid
Pour in the red wine to deglaze, scraping up browned bits from the bottom. Cook until wine is reduced by half, about 3–5 minutes. Add beef or lamb stock, rosemary, thyme, bay leaves, and remaining 1 tsp kosher salt. Bring to a simmer.

Finish Shanks
Carefully remove shanks from the braising liquid and keep warm. Skim fat from surface of braising liquid and strain solids into a bowl, pressing to extract juices. Reserve liquid for demi-glace reduction.

Reduce and Enrich
Pour the reserved braising liquid into a saucepan and bring to a brisk simmer over medium-high heat. Reduce until liquid measures about 1 to 1 1/4 cups (concentrated, about 10–15 minutes depending on volume). Stir in 1 cup prepared beef demi‑glace and simmer 5 minutes to meld flavors. Off heat, whisk in cold butter cubes a few at a time to create a glossy sauce. Adjust seasoning with salt and pepper to taste. Keep warm.

Mix Gremolata
In a bowl combine toasted chopped pistachios, chopped parsley, lemon zest, minced garlic, 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp salt and 1 tsp black pepper. Stir to combine. Taste and adjust acidity or salt. Set aside at room temperature.
Chimichurri

Make Chimichurri
In a food processor pulse parsley, cilantro, oregano, and garlic briefly until finely chopped (do not purée to a paste). Transfer to a bowl and stir in red wine vinegar, red pepper flakes, 6 tbsp olive oil, 3/4 tsp salt and 1/2 tsp black pepper. Let rest at room temperature for at least 15 minutes to marry flavors. Adjust seasoning.

Spoon a generous portion of mashed potato onto each plate. Place one braised lamb shank on top or beside the mash. Spoon 2–3 tablespoons of the warmed demi‑glace over the shank and around the plate. Arrange roasted chef's vegetables to the side.

Finish by spooning a small amount of chimichurri beside or lightly over the shank for bright herb flavor, then sprinkle 1–2 tablespoons of pistachio gremolata over the meat for texture and citrus notes. Garnish with microgreens if using. Serve immediately.
