Make dough
In a large bowl whisk together 2.25 cups all-purpose flour, 1 tsp instant yeast, 1 tsp fine sea salt, and 0.5 tsp sugar until evenly combined.

Stir 0.75 cups warm water and 1 tbsp olive oil together. Pour liquid into dry ingredients and mix with a wooden spoon or dough hook until a shaggy dough forms.

Turn dough out onto a lightly floured surface and knead for 6–8 minutes until smooth and slightly tacky but not sticky. (If using a stand mixer, knead 4–5 minutes on medium-low with the dough hook.)

Shape crust
Punch down the risen dough and turn it onto a lightly floured surface. Stretch or roll it into a 10–11 inch round (or shape to fit a 10-inch pan), making a slightly thicker rim for a crust. Transfer to a parchment-lined baking sheet or lightly oiled pizza pan.

Prepare blue cheese filling
While dough rises (or during pre-bake), combine 6 oz crumbled blue cheese and 3 oz softened cream cheese in a medium bowl. Add 0.25 cups whole milk, 2 tsp minced garlic, 0.5 tsp freshly ground black pepper, and 0.5 tsp lemon zest (if using). Stir or mash with a fork until smooth but still slightly chunky — you want a spreadable, flavorful mixture.

Adjust texture
If the mixture is too thick, add up to 1–2 tbsp more milk to reach a spreadable consistency. Taste and adjust seasoning; the blue cheese is salty so add salt only if needed.

Assemble
Spread the blue cheese mixture evenly over the pre-baked crust, leaving the rim exposed. Scatter any remaining larger crumbles on top for texture. Sprinkle 1 tbsp chopped fresh chives across the surface.

Return the assembled crust to the 475°F (245°C) oven and bake for 8–10 minutes until the topping is warmed through, bubbling slightly at the edges and the crust is golden. Baking time may vary with oven and pan—watch for gentle bubbling rather than heavy browning.

Remove from oven and immediately brush the crust edge lightly with the remaining melted butter for shine. Sprinkle 0.25 tsp red pepper flakes if using, and finish with 1 tbsp extra chopped chives or parsley. Let sit 3–4 minutes, slice, and serve warm.
