    Prepare

    Chill a coupe or martini glass by filling it with ice water while you prepare the cocktail.

    Dry shake (if using egg white)

    Add vodka, fresh lemon juice, simple syrup, and egg white to a cocktail shaker. Seal and shake vigorously without ice for 10–15 seconds. This aerates the egg white and creates a foamy texture.

    Wet shake

    Add a generous handful of ice to the shaker (or remove ice-water from the glass and discard). Seal and shake vigorously for 15–20 seconds until the shaker is very cold to the touch and the outside shows condensation.

    Strain

    Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and to preserve the foam.

    Finish with bitters

    Add 2 dashes of Angostura bitters on top of the foam. If desired, use a toothpick to gently swirl the bitters into a pattern on the surface.

Garnish & Serve

    Express a lemon twist over the drink to release oils, run it around the rim and drop it into the glass, or place a thin lemon wheel on the rim. Optionally grate a little lemon zest on top or add extra drops of bitters to taste.

    Serve immediately while the foam is fresh. Enjoy responsibly.
