Preparation
1. Cook the Vegetables
In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
2. Combine Ingredients
Add the chicken broth, peanut butter, salt, black pepper, and cayenne pepper to the pot. Stir well to combine and bring to a simmer.
3. Blend the Soup
Once the soup is simmering, use an immersion blender or a regular blender to puree the soup until smooth. If using a regular blender, blend in batches if necessary.
4. Finish with Cream and Ham
Stir in the heavy cream and diced Virginia ham. Heat through for about 5 minutes, adjusting seasoning to taste.
