Method

Crab Cake Preparation

  1. 1

    Mix Ingredients

In a large bowl, gently combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, panko breadcrumbs, salt, and black pepper. Be careful not to break up the crab meat too much.

  2. 2

    Form Cakes

Divide the mixture into equal portions and shape them into patties, about 3 inches in diameter.

  3. 3

    Chill

Place the patties on a baking sheet and refrigerate for at least 30 minutes to firm up.

  4. 4

    Cook

Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side, or until golden brown and cooked through.

Salad Preparation

  1. 5

    Prepare Vegetables

Thinly slice the shallots and julienne the baby carrots. Toss them with the frisée lettuce in a mixing bowl.

Pesto Preparation

  1. 6

    Make Pesto

In a food processor, combine the avocado, pistachios, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy.

Assembly

  1. 7

    Plate the Dish

On a plate, place a generous amount of the frisée salad mixture. Top with a crab cake and drizzle with the avocado-pistachio pesto.
