    Prepare the Vegetables

    Dice the tomatoes, cucumber, red bell pepper, and red onion. Mince the garlic cloves. Set aside.

    Blend the Ingredients

    In a blender or food processor, combine the diced tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.

    Add Seasonings

    Add olive oil, red wine vinegar, basil oil, salt, and black pepper to the blended mixture. Blend again until well incorporated.

    Chill the Gazpacho

    Transfer the gazpacho to a bowl and refrigerate for at least 1 hour to allow the flavors to meld.

    Prepare Garnish

    While the gazpacho chills, toast the pine nuts in a dry skillet over medium heat until golden brown. Chop the fresh basil leaves.

    Ladle the chilled gazpacho into bowls. Drizzle with additional basil oil, and top with toasted pine nuts and chopped basil. Enjoy!
