Preparation of Rice Middlins

    Cook the Rice

    In a medium saucepan, combine rice middlins and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until water is absorbed. Stir in butter and season with salt.

Cooking Sea Scallops

    Sear the Scallops

    Pat the sea scallops dry with paper towels. Season with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown. Sprinkle furikake seasoning over scallops and cook for an additional minute.

Making Walnut Fennel Salad

    Toss the Salad

    In a bowl, combine chopped walnuts, sliced fennel, olive oil, lemon juice, and salt. Toss together until well mixed.

Preparing Pickled Plum Sauce

    In a small bowl, mash the pickled plums with a fork. Add soy sauce and honey, mixing until smooth.
