In a skillet over medium heat, cook the country ham for about 3-4 minutes on each side until heated through and slightly crispy. Remove from heat and set aside.

Poach the Eggs
Fill a saucepan with water and bring it to a gentle simmer. Crack each egg into a small bowl and carefully slide it into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

While the eggs are poaching, split the English muffins in half and toast them until golden brown.
