    Boil and Peel the Eggs

    Place the eggs in a saucepan and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes. Transfer the eggs to an ice bath to cool, then peel and slice in half lengthwise.

    Prepare the Filling

    In a bowl, scoop out the yolks and mash them with mayonnaise, Dijon mustard, chopped country ham, chopped cornichons, salt, and black pepper until smooth.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg white halves.

    Fry the Eggs

    Heat olive oil in a skillet over medium heat. Carefully place the filled eggs cut-side down in the skillet and cook until the bottoms are crispy, about 2-3 minutes.

    Serve

    Transfer the crispy deviled eggs to a serving platter. Drizzle with red pepper jam, and garnish with paprika and chopped chives. Serve immediately.
