Prepare Crab Cakes

Mix Ingredients
In a large bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, green onions, beaten egg, breadcrumbs, salt, and pepper. Mix until well combined.

Form Cakes
Shape the mixture into patties, about 1/2 inch thick. Refrigerate for at least 30 minutes to help them hold their shape.

Fry Cakes
Heat oil in a skillet over medium heat. Fry the crab cakes for 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Combine Ingredients
In a bowl, mix mayonnaise, chopped hard-boiled eggs, capers, cornichons, parsley, lemon juice, salt, and pepper. Stir until well combined.
Assemble Sandwich

Build Sandwich
On each potato bun, place a lettuce leaf, a fried crab cake, a slice of tomato, a generous spoonful of sauce gribiche, and dill pickle slices. Top with the other half of the bun and serve.
