Caramelized Sea Scallops

    Prepare Scallops

    In a large skillet, heat olive oil over medium-high heat. Season scallops with salt and pepper.

    Place scallops in the skillet and sear for 2-3 minutes on each side until golden brown and cooked through. Add butter to the skillet and baste scallops for added flavor. Remove and set aside.

    Sauté Vegetables

    In a medium skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.

    Add corn, zucchini, and butternut squash. Season with salt and pepper. Cook for about 5-7 minutes until vegetables are tender. Stir in cilantro and set aside.

Fried Okra

    Prepare Breading

    In a bowl, combine cornmeal, flour, salt, and pepper.

    Fry Okra

    Dip sliced okra in beaten egg, then coat in the cornmeal mixture. Heat vegetable oil in a deep skillet over medium-high heat.

    Fry okra until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Béarnaise Sauce

    Prepare Reduction

    In a saucepan, combine shallots, vinegar, and tarragon. Simmer until reduced by half.

    In a bowl, whisk together egg yolks and the reduction. Slowly drizzle in melted butter while whisking continuously until thickened. Season with salt and pepper.
