Preparation of Salmon

    Prepare the Chili Rub

    In a small bowl, mix together the ancho chili powder, olive oil, salt, and black pepper. Rub this mixture evenly over the salmon fillets.

    Cook the Salmon

    Preheat a grill or skillet over medium-high heat. Cook the salmon fillets for about 4-5 minutes on each side, or until cooked through and flaky.

Preparation of Farro Verde

    Cook the Farro

    In a saucepan, bring the vegetable broth to a boil. Add the farro and reduce heat to a simmer. Cook for 25-30 minutes until tender. Drain any excess liquid.

    Finish the Farro

    Stir in the chopped parsley and lemon juice into the cooked farro. Season with salt and pepper to taste.

Preparation of Salad

    Prepare the Salad

    In a large bowl, combine the diced heirloom tomatoes, diced peaches, and torn basil. Drizzle with balsamic vinegar and toss gently.

    Serve

    Plate the farro verde, top with the grilled ancho chili-rubbed salmon, and serve the salad on the side. Add a dollop of crème fraîche on top of the salmon.
