    Marinate the Rabbit

    In a large bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Add the whole rabbit and rub the marinade all over it. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat the oven to 375°F (190°C).

    Sear the Rabbit

    In a large oven-safe skillet or Dutch oven, heat a little olive oil over medium-high heat. Sear the marinated rabbit on all sides until golden brown, about 5-7 minutes.

    Add Vegetables

    Add the chopped carrots, onions, potatoes, and celery around the rabbit in the skillet. Pour in the chicken broth.

    Roast

    Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for about 1.5 to 2 hours, or until the rabbit is tender and cooked through.

    Serve

    Remove the rabbit from the oven. Let it rest for a few minutes before carving. Serve the rabbit with the roasted vegetables and spoon some of the broth over the top.
