Preparation Steps

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover them with water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes. Afterward, transfer the eggs to an ice bath to cool.

  2. 2

    Prepare the Mayonnaise

In a bowl, combine the mayonnaise, lemon juice, salt, and black pepper. Mix well until smooth.

  3. 3

    Shell and Slice the Eggs

Once the eggs are cool, peel them and slice them in half lengthwise. Remove the yolks and place them in a separate bowl.

  4. 4

    Mix the Crab Filling

Add the peekytoe crab meat and chopped parsley to the bowl with the egg yolks. Gently mix with a fork until combined. Add some salt and pepper to taste.

  5. 5

    Assemble the Dish

Fill the egg white halves with the crab mixture, then drizzle with the prepared mayonnaise. Optionally, garnish with extra parsley.
