    Make the Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.

Cheesecake Filling Preparation

    Prepare the Cheesecake Filling

    In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the vanilla extract and mix well. Add the eggs one at a time, mixing well after each addition. In another bowl, whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture. Pour this filling over the cooled crust.

    Bake the Cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove and let cool to room temperature before refrigerating for at least 4 hours or overnight.

    Prepare the Strawberry Topping

    In a bowl, combine the sliced strawberries, sugar, and lemon juice. Let it sit for at least 30 minutes to allow the strawberries to release their juices.
