Prepare the Granité

Make the Lemon Granité
In a small saucepan, combine water, lemon juice, and sugar. Heat over medium heat until the sugar dissolves completely. Remove from heat and let it cool. Once cooled, pour the mixture into a shallow dish and place in the freezer.

Freeze and Scrape
After 1 hour, stir the granité with a fork to break up the ice crystals. Repeat this process every 30 minutes until the granité is fluffy and has a granular texture, about 2-3 hours.
Prepare the Oysters

Shuck the Oysters
Using an oyster knife, carefully shuck the oysters and place them on a bed of ice to keep them cold.

Serve
Once the granité is ready, spoon a small amount over each oyster and serve with lemon wedges on the side.
