Prepare croissant dough for waffle

If using sheet or triangle croissant dough, unroll and lightly press seams together to form roughly 1 cup of dough. If pieces are sticky, dust lightly with the 2 tbs flour and knead briefly to make a single cohesive ball. Roll or pat the dough to a rectangle roughly 7 x 5 inches so it fits your waffle iron. Brush both sides lightly with melted butter.

Cook croissant waffle

Preheat a medium or Belgian waffle iron to medium-high and spray or oil the plates. Place the prepared croissant dough in the center, close the lid and cook 3–5 minutes until puffed, golden brown and crisp on the outside. Remove carefully and keep warm on a baking sheet in a 200°F (95°C) oven while finishing other components.

Cook bacon

Arrange 8 thick-cut bacon slices in a cold skillet in a single layer. Turn heat to medium and cook, flipping occasionally, until fat renders and bacon is browned and crisp at the edges, about 8–12 minutes depending on thickness. For evenly crisp slices, press gently with a spatula. Transfer to paper towel-lined plate to drain.

Optional candied finish

If using brown sugar, after the bacon has cooked but while still hot, sprinkle the 1 tbs brown sugar evenly over the slices and turn each slice to coat; let rest on the towel for 1 minute so sugar melts into a shiny glaze. Finish with 1/4 tsp freshly ground black pepper.

Velvet Scrambled Eggs

Whisk eggs and dairy

Crack 6 eggs into a medium bowl, add 1/4 cup milk or half-and-half and 1/2 tsp kosher salt, and whisk gently until just combined and uniform in color (avoid whipping lots of air). If using cream cheese for extra silkiness, have it cubed at room temperature to incorporate later.

Cook low and slow

Heat a nonstick skillet over low heat and add 2 tbs unsalted butter. When butter is melted and foamy but not browning, pour in the egg mixture. Let the eggs sit undisturbed for about 10–15 seconds until edges begin to set. Using a silicone spatula, gently push the set edges toward the center, tilting the pan to let uncooked eggs flow to the edges. Continue this slow folding action for 3–5 minutes until large creamy curds form but the eggs are still very slightly underdone.

Finish and season

If using cream cheese, add the cubed cream cheese now and gently fold it into the eggs until melted and incorporated, creating extra velvet. Remove the pan from heat when the eggs are custardy and slightly runny (they will keep cooking off heat). Taste and adjust with 1/4 tsp additional salt and 1/4 tsp freshly ground black pepper if desired. Sprinkle chopped chives over the eggs.

Assembly & Finishing

Layer and assemble

Place the warm croissant waffle on a plate. Arrange 3–4 slices of the cooked thick bacon in a single layer on top of the waffle (for extra coverage, overlap slightly). Spoon the velvet scrambled eggs over the bacon, letting soft curds mound gently.

Add cheese & serve

If using cheese, sprinkle 1/2 cup shredded cheddar or Gruyère over the hot eggs so it warms and melts slightly. Finish with a small drizzle of maple syrup for sweet-savory contrast or a few drops of hot sauce for heat. Serve immediately.
