Waffle Croissant Batter

Prep croissant dough

If using whole croissants, tear or cut them into large chunks so they will incorporate into the batter and fill waffle pockets. If you have pre-rolled croissant dough, cut into pieces approximately 1-inch squares. Aim for about 8 ounces by weight total.

Whisk liquid base

In a medium bowl, whisk together 1 cup whole milk, 1 large egg, 1 tablespoon granulated sugar, 1 teaspoon vanilla extract and 1 teaspoon fine sea salt until combined and slightly frothy.

Combine dough and wet ingredients

Place croissant pieces in a large mixing bowl. Pour the milk-egg mixture over the croissant pieces and gently press with a spatula so the dough soaks up the liquid but retains visible buttery flake layers. Let rest 5 minutes, then fold gently until the dough is evenly moistened but not a smooth batter (you want pieces to remain to produce layers).

Cooking & Assembly

Heat waffle iron

Preheat a Belgian waffle iron (or croissant/waffle hybrid iron if available) to medium-high heat. Lightly brush both plates with 1 tablespoon melted or softened unsalted butter to prevent sticking.

Portion batter into iron

For each waffle, scoop approximately 3/4 to 1 cup of the croissant-dough mixture into the center of the preheated iron. Spread slightly to fill the grid but avoid overfilling — the dough will expand and compress the layers.

Add Nutella and banana

Spoon about 2 tablespoons Nutella onto the dough in the iron and gently press a few banana slices (3–4 slices) into the Nutella layer. If you prefer, warm the Nutella 10–15 seconds in the microwave to soften for easier spreading.

Cook the waffle

Close the waffle iron and cook for 3–5 minutes, or until the exterior is deep golden-brown and crisp and the interior is cooked through. Cooking time varies by iron; open when steam drops significantly and edges look set.

Finish and crisp

Remove the croissant waffle with a spatula. If you want extra sheen and the French butter finish: immediately brush the warm waffle with 1–2 tablespoons softened French-style butter and sprinkle a pinch of flaky sea salt over the top to enhance flavor.

Serving & Garnish

Plate the waffle and spread an additional 1–2 teaspoons of Nutella on top if desired, or pipe a small dollop. Arrange a few fresh banana slices on top. Sprinkle roughly 1 tablespoon chopped roasted almonds over the waffle for crunch.

Dust with 1 teaspoon powdered sugar if you want a sweet finish. Serve immediately while warm so the Nutella is gooey and butter is melted.
