Batter / Pancake Crepes
Make the batter
In a medium bowl whisk together 1 cup all-purpose flour, 1 tsp granulated sugar, and 1 tsp fine sea salt until combined. In a separate bowl whisk 1 cup whole milk with 1 large egg, 1 tsp vanilla extract, and 2 tbs melted unsalted butter. Pour the wet ingredients into the dry and whisk until smooth and free of lumps. Let the batter rest at room temperature for 10 minutes to hydrate the flour and reduce bubbles.
Adjust consistency if needed: the batter should be pourable but slightly thicker than heavy cream. If too thick, whisk in 1–2 tbs milk; if too thin, add 1 tbs flour.
Cooking & Assembly
Cook the crepes
Heat a nonstick skillet or crepe pan over medium heat. Add 1 tsp unsalted butter and swirl to coat. When butter is foamy (but not browned), pour about 1/4 cup batter into the center and immediately tilt and rotate the pan to spread batter into a thin round (for smaller crepes use 2–3 tbs batter). Cook 30–45 seconds until the edges set and the underside is lightly golden. Flip with a spatula and cook 15–20 seconds on the second side. Transfer to a plate and keep warm covered with a clean towel. Repeat with remaining batter, adding more butter between crepes as needed. Yield will be about 6–8 thin crepes depending on size.
Prepare bananas
Peel the 2 ripe bananas. For a simple filling, slice bananas crosswise into 1/4-inch rounds. For a warm filling, halve bananas lengthwise, then slice or leave as halves to briefly caramelize in the skillet.
Assemble crepes
Lay one warm crepe flat. Spread 1 tablespoon Nutella across the center of the crepe (microwave Nutella 8–10 seconds if very thick to loosen). Arrange banana slices on top of the Nutella (about 2–3 tbs worth of slices per crepe). Fold crepe: fold in half, then fold again into a triangle or roll tightly. Repeat for remaining crepes, using about 6 tbs Nutella total and both bananas.
Finish & serve
Place folded crepes on a serving plate. Dust with 2 tbs powdered sugar if using, sprinkle 2 tbs chopped toasted hazelnuts and garnish with fresh berries or mint leaves. Serve immediately while warm so Nutella is soft and gooey.
