Prepare

Remove duck breasts from refrigerator 20–30 minutes before cooking to come closer to room temperature. Pat skins dry with paper towel.

Using a sharp knife, score the skin in a crosshatch pattern without cutting into the meat (about 1/8" deep). This helps render fat.

Season both sides of each breast evenly with kosher salt and freshly ground black pepper. Press seasoning into meat.

Place a large cold skillet (preferably cast iron or heavy stainless) over medium-low heat. When pan is warm, place duck breasts skin-side down (no added fat yet).

Render the fat slowly: cook skin-side down 8–12 minutes, adjusting heat so skin sizzles gently but does not burn. Spoon off excess rendered fat into a small bowl and reserve for other uses (or discard). Rotate breasts occasionally for even browning; skin should be deeply golden and crisp.

When skin is crisp and most fat rendered, add 1 tbs neutral oil to the pan (or maintain the fat already present) and flip breasts skin-side up. Increase heat to medium-high and sear the meat side 2–3 minutes until a brown crust forms.

Reduce heat to medium and continue cooking to desired doneness: about 3–5 minutes for medium-rare (internal temperature 125–130°F / 52–54°C). Use an instant-read thermometer for accuracy.

Remove duck breasts to a cutting board, tent loosely with foil and rest 6–8 minutes. Resting lets juices redistribute and finish carryover cooking.

Prepare Squash

Preheat oven to 375°F (190°C). Wash patty pan squash, trim stems and slice a thin cap off the top of each. Using a spoon, scoop out the center to create a cavity, leaving a 1/4" shell. Reserve scooped flesh.

Lightly brush or toss squash shells with 1 tbs olive oil and season inside with a pinch of salt and pepper. Place squash on a baking sheet cut-side up.

Make Filling

Heat 1 tbs olive oil in a skillet over medium heat. Add minced shallot and sauté 2–3 minutes until translucent. Add reserved scooped squash flesh (chopped small) and minced garlic and cook 2–3 minutes until softened.

Add chopped spinach and cook until wilted, about 1–2 minutes. Remove from heat and transfer mixture to a bowl to cool slightly.

Stir in ricotta, grated parmesan, lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper until well combined. Taste and adjust seasoning.

Spoon filling into each hollowed patty pan squash, mounding slightly. Drizzle remaining olive oil lightly over filled squash.

Bake in preheated oven 18–22 minutes, until squash is tender and filling is set and lightly golden on top. Remove from oven and keep warm.

Port-Tamarind Sauce

Sauté Shallot

While duck rests, wipe the skillet of excess burnt bits leaving about 1 tbs of fond and any reserved rendered duck fat if desired. Return to medium heat, add 1 tbs unsalted butter and the minced shallot and cook 1–2 minutes until softened and translucent.

Pour in 1 cup port and 1/2 cup chicken or duck stock, scraping up any browned bits. Stir in 1 tsp tamarind paste, 1 tsp brown sugar, 1 tsp red wine vinegar, and fresh thyme if using. Bring to a boil then reduce to a simmer.

Simmer gently until sauce is reduced by about half and coats the back of a spoon, about 8–10 minutes. Taste and adjust balance: add a pinch of salt or more tamarind if you want more tang, or more sugar if too tart.

Off heat, whisk in remaining 1 tbs unsalted butter (cold) to finish the sauce and give it a glossy sheen. Season with 1/4 tsp salt and 1/8 tsp black pepper to taste. Keep warm.

Plating & Garnish

Slice duck breasts thinly against the grain into 1/4" slices. Fan slices on each plate next to a stuffed patty pan squash.

Spoon warm port-tamarind sauce over the sliced duck and around the plate. Garnish with microgreens or chopped parsley and an optional lemon wedge on the side.

Serve immediately while duck is warm and skin remains crisp.
