Prepare artichokes

Trim tops: using a sharp knife, cut about 1 inch off the top of each artichoke. Trim stem to about 1/2 inch and peel tough outer stem skin. Using kitchen scissors, snip the thorny tips of the outer leaves. Rub cut surfaces with half the lemon to prevent browning.

Cook artichokes

In a large saucepan or deep skillet, bring 8 cups water to a simmer with 1 tablespoon kosher salt and the bay leaf. Add the prepared artichokes stem-side-down. Reduce heat to maintain a gentle simmer, cover, and poach until a leaf near the center pulls away easily and the base is tender when pierced with a paring knife, about 25–35 minutes depending on size. Remove artichokes and let drain, cut-side down, for 5 minutes.

Warm and flavor

In a medium sauté pan, heat 2 tablespoons olive oil and 1 tablespoon butter over medium heat until butter foams. Add the sliced garlic and cook 30–45 seconds until fragrant but not browned. Add the drained artichokes, cut-side down, and cook 2–3 minutes to warm and lightly brown the exposed edges, spooning garlic oil over them. Transfer artichokes to a warm plate, drizzle reserved garlic oil over, and sprinkle with chopped parsley and a light pinch of salt. Keep warm while you finish risotto and vinaigrette.

Parmesan Risotto

Sweat shallot

Heat 1 tablespoon olive oil and 1 tablespoon butter in a medium saucepan over medium heat. Add the minced shallot and cook gently for 2–3 minutes until translucent and softened but not browned.

Toast rice

Add 1 cup Arborio rice and stir to coat the grains with oil and butter. Toast the rice 1–2 minutes until edges become slightly translucent.

Deglaze

Pour in 1 tablespoon dry white wine and stir until mostly absorbed by the rice.

Cook risotto

Add 1/2 cup of the hot stock to the rice and stir constantly until nearly absorbed. Continue adding the hot stock, 1/2 cup at a time, stirring frequently and allowing the rice to absorb most of each addition before adding more. This process should take about 18–22 minutes. The risotto should be creamy and the grains tender with a slight bite (al dente).

Finish with butter and Parmesan

Remove from heat and stir in 1 tablespoon butter and 1 cup grated Parmesan until glossy and well combined. Season with 1 teaspoon salt and 1 teaspoon freshly ground black pepper (adjust to taste). Keep warm.

Black Truffle Vinaigrette

In a small bowl or jar combine 1 tablespoon white wine vinegar, 1 teaspoon lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon truffle oil or a small dab (about 1/2–1 tsp) of truffle paste, 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Whisk or shake while slowly streaming in 4 tablespoons extra-virgin olive oil until emulsified. Taste and adjust acidity, seasoning, or truffle intensity as desired.

Plating & Finish

Spoon a generous scoop (about 1/2 cup) of warm Parmesan risotto into the center of each serving plate, creating a shallow nest.

Halve or quarter the warm artichokes (depending on size) and arrange over or beside the risotto. Drizzle 1–2 teaspoons of the black truffle vinaigrette over the artichoke and a little around the risotto—use more sparingly if your truffle oil is intense.

Scatter shaved Parmesan over the dish, finish with a few microgreens or baby arugula, and, if desired, an extra light drizzle of truffle oil. Serve immediately so artichokes and risotto remain warm.
