Prepare the Chicken
Marinate chicken pieces in buttermilk for at least 2 hours, or overnight for best results.

Breading
In a large bowl, mix flour, cornmeal, Cajun seasoning, salt, and black pepper. Dredge marinated chicken in the mixture until fully coated.

Frying
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 15-20 minutes per side. Drain on paper towels.

Cook the Collard Greens
In a large pot, sauté chopped onion and minced garlic until fragrant. Add smoked ham hock and chicken broth, bring to a boil.

Add collard greens and simmer for about 45 minutes until greens are tender. Remove ham hock and shred meat, returning it to the pot.

In a large mixing bowl, combine sugar, flour, milk, eggs, melted butter, and vanilla extract. Stir until smooth.
