Mac n' Cheese

In a large mixing bowl, combine the mashed black beans, cooked quinoa, rolled oats, chopped red onion, minced garlic, cumin, paprika, salt, and black pepper. Mix until well combined.

Prepare the Burger Mixture

Divide the mixture into 4 equal portions and shape them into patties.

Form the Patties

Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.

Cook the Patties

Place each patty on a burger bun, and top with lettuce, a slice of tomato, avocado, and a dollop of vegan mayo.

Assemble the Burgers

Burger buns (whole grain or gluten-free)

Lay out 2 slices of rye bread. Spread 1 tablespoon of Russian dressing on each slice.

Assemble the Sandwich

On one slice of bread, layer the corned beef, sauerkraut, and Swiss cheese. Top with the second slice of bread.

Layer the Ingredients

Spread 1 tablespoon of butter on the outside of each slice of bread.

Butter the Bread

Heat a skillet over medium heat. Place the sandwich in the skillet and grill for about 4-5 minutes on each side, until the bread is golden brown and the cheese is melted.

Grill the Sandwich

Remove the sandwich from the skillet, slice in half, and serve hot.

Butter

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cook the Pasta

In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until lightly golden.

Prepare the Cheese Sauce

Slowly whisk in the milk, making sure to remove any lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

Add Milk

Remove the pot from heat and stir in the shredded cheddar and Gruyère cheese until fully melted and smooth. Season with salt, black pepper, and mustard powder.

Incorporate the Cheeses

Add the drained macaroni to the cheese sauce and stir until well coated. If desired, sprinkle breadcrumbs on top.

Combine with Pasta

Transfer to a baking dish and bake at 350°F (175°C) for about 20 minutes, or until bubbling and golden on top.
