Chill and prepare
Place crushed ice in a large shallow serving platter or on individual oyster plates. Sprinkle the ice lightly with the sea salt to keep it from melting too quickly. Refrigerate until ready to use.

Shuck oysters
Using an oyster knife and a towel or glove, hold each oyster cup-side down. Insert the tip of the knife at the hinge, twist gently to pop the shell, run the blade along the top shell to cut the muscle and remove the top shell. Loosen the oyster from the bottom shell with the knife while keeping as much liquor (brine) in the shell as possible. Place each shucked oyster on the bed of ice, cup-side down so it sits steady.

Keep oysters cold on ice until ready to serve. Work quickly and keep shucked oysters refrigerated if not serving immediately (no more than 2 hours out of refrigeration).
Kalamansi vinegar mignonette

Mix base
Pour the kalamansi juice and rice wine vinegar into a small bowl. Stir in the granulated sugar until dissolved.

Add aromatics & season
Add the finely minced shallot(s), coarse ground black pepper, and fine sea salt to the citrus-vinegar mixture. Stir to combine and taste; adjust salt or pepper as needed. Let the mignonette sit for at least 10 minutes to allow the shallot to mellow and the flavors to marry.

Finish
Stir in the finely chopped cilantro (or parsley) just before serving to preserve fresh color and aroma. If the mixture tastes too sharp, add up to 1/2 teaspoon more sugar or a splash (about 1 tsp) more rice vinegar to balance.

Arrange the shucked oysters on the bed of ice so each oyster sits level and retains its liquor. Spoon about 1/2 to 1 teaspoon of the kalamansi vinegar mignonette onto each oyster (or serve the mignonette in a small bowl for guests to spoon as desired).

Recommended serving note: plan on 4–6 oysters per person as an appetizer; 8–12 per person for a main-course oyster platter. Keep leftover oysters refrigerated and consume within 24 hours; discard any oysters that appear off or have excessive breakage of shells.
