Preheat and prepare
Preheat oven to 325°F (160°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
Mix dry ingredients
In a large mixing bowl combine 2 cups rolled oats, 1/2 cup chopped almonds, 1/4 cup pumpkin seeds, 1/4 cup shredded coconut, 2 tablespoons chia seeds, 1 teaspoon ground cinnamon, and 1/4 teaspoon fine sea salt. Stir until evenly distributed.
Combine wet ingredients
In a small bowl or measuring cup whisk together 3 tablespoons oil, 3 tablespoons maple syrup (or honey), and 1 teaspoon vanilla extract until smooth.
Coat and spread
Pour the wet mixture over the dry ingredients and toss thoroughly with a spatula or wooden spoon until everything is evenly coated and there are some clumps forming. Spread the mixture into an even layer on the prepared baking sheet, pressing lightly with the back of the spatula to encourage clusters.
Bake
Bake in the preheated oven for 18–22 minutes, stirring gently once halfway through (around 10–11 minutes) to encourage even browning. For larger clusters, do not over-stir at the halfway point. The granola is done when it is golden brown and fragrant.
Cool and add chia
Remove the sheet from the oven and allow granola to cool completely on the baking sheet (about 20–30 minutes). As it cools, it will crisp and form clusters. If you prefer the chia seeds dispersed on top rather than baked, sprinkle an additional 1 tablespoon chia seeds over the warm granola now; otherwise the 2 tablespoons included in the mix are already baked in.
Store
Once fully cooled, break into clusters with your hands and transfer granola to an airtight container. Store at room temperature for up to 2 weeks or freeze for up to 3 months.
Yogurt & Assembly
Portion yogurt
Spoon 3/4 cup plain Greek yogurt into each serving bowl or jar (this recipe yields 4 servings).
Sweeten and flavor (optional)
If desired, stir 1/2 teaspoon honey or maple syrup into each portion of yogurt and a light sprinkle of lemon zest (about 1/8–1/4 teaspoon) to brighten the flavor.
Top
Divide the cooled granola evenly among the four portions, about 1/3 to 1/2 cup granola per serving, depending on how crunchy you like it. Top each with 1/4 cup fresh berries (or a total of 1 cup divided among 4).
Serve
Serve immediately so the granola stays crisp. Leftovers can be assembled just before eating to maintain crunch. If packing for later, store granola separately from yogurt and fruit and combine when ready to eat.
