    Build and stir

    Add the gin, sweet vermouth, St. Agrestis Phoney, and 2 dashes of Angostura bitters to a mixing glass or shaker filled with large ice cubes. Stir gently for 20–30 seconds until well chilled and slightly diluted (the glass should feel cold and the mixture should have slight frost).

    Prepare glass

    Place a large ice cube or two into an Old Fashioned (rocks) glass.

    Strain

    Double-strain (if using crushed ice) or fine-strain the chilled cocktail from the mixing glass into the prepared rocks glass over the ice.

    Optional fizz

    If you want a lighter, spritz-like 'phoney' Negroni, top the cocktail with about 1 oz club soda and gently stir once to integrate.

    Garnish and serve

    Express the oils of the orange peel over the surface of the drink by holding it skin-side down and giving it a sharp twist to release the oils, then rub the peel around the rim of the glass and drop it in as garnish. Serve immediately.
