    Prepare glass

    Chill a highball or Collins glass by filling it with ice and cold water while you prepare the drink. Alternatively, place it in the freezer for 5–10 minutes.

    Mix aromatics

    In a mixing glass or cocktail shaker, combine the rose water, fresh lemon juice, and simple syrup. Stir briefly to combine. Taste and adjust: rose water is potent, so keep to 1/2 tsp unless you prefer a stronger floral note.

    Add spirit (optional)

    If making a boozy version, add the gin to the mixing glass. If you prefer a mocktail, omit the gin and proceed.

    Combine with ice

    Fill the mixing glass or shaker with ice and stir for about 10–15 seconds to chill and slightly dilute the aromatic mixture. If you omitted gin, you can simply stir briefly to chill.

    Assemble

    Discard the ice/water from your chilled serving glass and fill it with fresh ice (about 1 cup). Strain the chilled mixture into the glass over the ice.

    Top with bitter lemon soda

    Gently pour 3 oz chilled bitter lemon soda over the strained mixture. Give the drink one gentle stir to integrate; avoid over-stirring to preserve carbonation.

    Garnish and serve

    Garnish with a lemon wheel or twist and, if desired, an edible rose petal. Serve immediately with a straw or cocktail pick.

    Notes

    Adjust sweetness with simple syrup to taste. For a brighter citrus profile, increase lemon juice by up to 0.25 oz. If rose water is very concentrated, reduce to 1/4 tsp. Use a quality bitter lemon soda for pronounced quinine and lemon bite that balances the floral rose.
