Prepare produce
Wash and dry the mixed salad greens thoroughly using a salad spinner or clean kitchen towels; pat dry if needed. Halve the cherry tomatoes. Peel (if desired) and thinly slice the cucumber into half-moons. Thinly slice the red onion and separate into rings. Peel and shred the carrot. If using avocado, halve, pit and slice just before serving to avoid browning.

Assemble salad
In a large salad bowl, combine the dried mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrot. Add the toasted nuts and crumbled cheese if using. Wait to add avocado until just before dressing to preserve color and texture.

Make vinaigrette
In a small bowl or jar, combine the red wine vinegar, Dijon mustard, honey (or maple syrup), minced garlic, lemon juice, salt, and black pepper. Whisk or shake until the mustard and sweetener are dissolved. Slowly drizzle in the olive oil while whisking continuously to emulsify, or add oil to the jar and shake vigorously until well combined. Taste and adjust seasoning — add more salt, lemon juice, or honey as desired.

Dress the salad
Just before serving, add the avocado slices (if using) to the salad bowl. Pour about 3–4 tablespoons of the vinaigrette over the salad (start light; you can always add more). Toss gently but thoroughly to coat the greens and vegetables evenly. Taste and add more dressing, salt, or pepper if needed.

Serve
Transfer the dressed salad to individual plates or serve family-style. Sprinkle any additional toasted nuts or cheese on top as garnish. Serve immediately.
