    Chill ingredients and glassware

    Place the sparkling wine and freshly squeezed orange juice in the refrigerator for at least 1 hour before serving. If you prefer extra-chilled glasses, fill them with ice water and let sit for 5 minutes, then discard the ice water and quickly dry the glasses.

    Prepare orange juice

    If using fresh oranges, roll each orange on the counter firmly with your palm to loosen the juice, cut in half, and squeeze until you have the required amount (about 1 cup yields ~8 fl oz). Strain through a fine mesh sieve into a measuring cup to remove pulp and seeds if you prefer a smoother drink.

    Combine in glass

    Pour 1/2 cup (120 ml) of chilled orange juice into each chilled flute. Hold the glass at a slight angle and slowly pour 1/2 cup (120 ml) of chilled sparkling wine down the side to preserve bubbles and reduce foaming. Do not stir.

    Garnish and serve

    Garnish each flute with an orange wheel or a thin twist of orange peel on the rim. Serve immediately while effervescent.

    Optional variations

    For a fruitier mimosa, substitute part of the orange juice with blood orange or tangerine juice. For a sweeter drink, use a slightly sweeter sparkling wine or add 1/2 tsp of simple syrup per glass and stir gently once assembled.
