Prepare Bread & Spread

    Split and toast (optional)

    Slice the roll lengthwise, leaving a hinge if desired. If you prefer a slightly crisp exterior, lightly toast the cut faces under a broiler or in a skillet for 1–2 minutes until just golden.

    If using, spread the interior of the roll lightly with the butter to add richness and to help keep the bread from getting soggy.

Make Dressing & Condiment

    Combine mayo and pepper relish

    In a small bowl, combine the mayonnaise and pepper relish. Stir until smooth and evenly blended. Taste and adjust relish for heat or sweetness as desired.

    Make oil & vinegar drizzle

    In a separate small bowl or measuring cup, whisk together the extra-virgin olive oil and red wine vinegar with a pinch (about 1/8 tsp) of salt and a few turns of freshly ground black pepper until emulsified.

Assemble Sandwich

    Spread about half of the mayo + pepper relish mixture evenly over the bottom half of the roll. Spread the remaining half lightly on the top half of the roll.

    Layer the provolone slices on the bottom half first; this creates a cheese barrier that helps prevent moisture from soft meats from soaking the bread.

    Fold and arrange the salami slices in a slight overlap across the cheese so they cover the length of the roll.

    Add the mortadella in an even layer on top of the salami, then lay the prosciutto gently over the mortadella. Arrange the meats so each bite includes a mix.

    Tuck the washed lettuce leaves on top of the meats. If lettuce leaves are large, tear them so the sandwich is easier to eat.

    Drizzle the oil & vinegar mixture over the lettuce and meats, distributing it evenly. If you prefer, brush the oil & vinegar onto the top interior of the roll instead to keep the bread crisper.

    Season the interior with the remaining salt and freshly ground black pepper to taste, using sparingly since the cured meats are already salty.

Finish & Serve

    Close the sandwich and press gently but firmly to compact the layers. If serving immediately, cut the sandwich in half on a slight diagonal for easier handling.

    Serve with extra pepper relish on the side for dipping and a small pickle or chips, if desired.
