    In a small saucepan or microwave-safe container, combine rice vinegar, water, sugar, and kosher salt. Stir or gently heat until sugar and salt dissolve (about 1–2 minutes). Let cool slightly.

    Place sliced cucumbers, thinly sliced shallot, and dill sprigs in a clean jar or bowl. Pour the pickling liquid over the vegetables, add crushed red pepper flakes if using, and press to submerge. Cool to room temperature, then refrigerate at least 30 minutes (preferably 2 hours) before serving. Keeps in the fridge for up to 2 weeks.

Remoulade

    In a bowl, combine mayonnaise, Dijon and whole grain mustards, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce. Whisk until smooth.

    Fold in chopped capers, minced cornichons, minced shallot, and minced parsley. Season with salt and black pepper to taste. Chill for at least 15 minutes to allow flavors to meld. Adjust acidity or heat with additional lemon juice or hot sauce if desired.

Fried Oysters

    Rinse shucked oysters gently and pat dry on paper towels. Transfer to a bowl and pour buttermilk over them. Let sit 10–15 minutes in the refrigerator (this helps tenderize and helps coating adhere).

    While oysters rest, prepare the seasoned flour: in a shallow bowl or wide plate, whisk together 1.5 cups all-purpose flour, 1/2 cup cornmeal, 2 tsp salt, 1 tsp black pepper, 1 tsp smoked paprika, and 1/4 tsp cayenne. If using panko for extra crunch, mix it with the flour mixture or place in a separate shallow dish.

    Set up a breading station with three shallow dishes: (1) 1/2 cup flour for initial dredge, (2) beaten eggs thinned with 2 tsp milk/water, (3) seasoned flour/cornmeal mixture (and panko if used). Dredge each oyster lightly in the plain flour, shake off excess, dip into beaten eggs, then press into the seasoned flour mixture to fully coat. Place coated oysters on a wire rack and let rest 5–10 minutes to set the crust.

    Pour oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1.5 inches (roughly 3–4 cups oil depending on pan). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a pinch of flour—the flour should sizzle immediately and brown in about 45–60 seconds.

    Fry oysters in small batches (4–6 at a time, depending on pan size) to avoid overcrowding. Fry for 1.5–2.5 minutes, turning once, until golden brown and crisp. Cooking time varies by oyster size—do not overcook; oysters should be just opaque and tender inside.

    Use a slotted spoon or spider to transfer fried oysters to a wire rack or paper towel-lined baking sheet to drain. Season immediately with a light sprinkle of salt while hot.

    Keep finished oysters warm in a 200°F (95°C) oven on a tray while you fry remaining batches. Re-check oil temperature between batches and adjust heat to maintain 325–350°F (160–175°C) for consistent frying.

    To serve, arrange fried oysters on a platter or individual plates. Spoon remoulade alongside or drizzle lightly over oysters. Garnish with chopped parsley and lemon wedges. Serve with house pickles on the side for contrast.
