    Prepare the glass

    Pour a small amount of celery salt onto a shallow plate. Rub the rim of a highball or pint glass with the lemon wedge, then dip the rim into the celery salt to coat. Fill the glass about two-thirds full with ice cubes and set aside.

    Mix the cocktail

    In a cocktail shaker (or mixing glass) add the vodka, tomato juice, fresh lemon juice, Worcestershire sauce, prepared horseradish, hot sauce, smoked paprika (if using), a pinch of celery salt, and several grinds of freshly ground black pepper. Add a handful of ice to the shaker.

    Combine and chill

    Shake gently 6–8 seconds if you prefer a lightly aerated, slightly frothy drink, or simply roll (stir) with a bar spoon for 10–15 seconds if you want a smoother texture. Shaking will dilute slightly more; both are acceptable.

    Taste and adjust

    Taste a small amount. Adjust seasoning as needed: add more hot sauce for heat, more Worcestershire for umami, or a touch more lemon for brightness. If it tastes flat, add another 1/4 tsp horseradish or another dash of hot sauce, then stir to combine.

    Finish and garnish

    Strain the cocktail into the prepared ice-filled glass. Grind a little more black pepper on top. Garnish with the celery stalk, lemon wedge on the rim, and optional olives or pickled green bean on a skewer. Serve immediately.
