Prepare the Brisket
Rub the brisket with BBQ rub and let it marinate in the refrigerator for at least 4 hours or overnight.

Smoke the Brisket
Preheat your smoker to 225°F (107°C). Smoke the brisket for approximately 12 hours, or until it reaches an internal temperature of 195°F (90°C).

Make the Dijon Aioli
In a bowl, mix together the mayonnaise and Dijon mustard until well combined.

Slice the Brisket
Once the brisket is done smoking, let it rest for at least 30 minutes. Then, slice it against the grain into thin pieces.

Assemble the Sandwich
On the bottom half of each bun, layer the sliced brisket, a slice of cheddar cheese, a drizzle of sweet BBQ sauce, and a generous spread of Dijon aioli. Top with the other half of the bun.
